PARMIGIANA OF EGGPLANT IN THE MICROWAVE


Excellent recipe, light, fast and easy to prepare

Ingredients for 4 people: -500 gr of sliced eggplant and grilled -550 grams of peeled, pulp or tomato sauce, -500 / 600 grams of mozzarella, -120 gr of Grana Padano or Parmigiano, -2/3 tablespoons triple concentrate tomato, -Garlic and oil -basilico, salt to taste.

Method:

Put to fry garlic and oil in a saucepan. Add salt, tomato and concentrated and cook for about 20 minutes (the sauce should not be liquid but well dry).

During cooking the sauce cut the eggplant into thin slices of approximately 1 cm. Perform on one side of each slice a grid, impacting with a knife but without arriving in the oven. Set a 5-minute Crisp mode. When finished, turn the eggplant slices and set back five minutes into Crisp mode.

When the sauce and the eggplant is ready, put a little sauce on the bottom of a baking dish. and add a layer of eggplant and mozzarella. Then redo a second layer of eggplant tomato and mozzarella and a third ancora.Cospargete the surface of mozzarella and Parmesan cheese, put the pan in the microwave cook for 5 minutes with the crisp + 2 minute function in combi (crisp grill +). Garnish with fresh oregano and basil leaves.
